Prepare the Cake
- Preheat the oven to 350?F (175?C). Grease and flour a cake pan.
- In a mixing bowl, combine flour, sugar, shredded coconut, baking powder, baking soda, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and crushed pineapple.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting
- In a mixing bowl, beat together cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla, mixing until well combined and fluffy.
- Spread the frosting evenly over the cooled cake and sprinkle with shredded coconut.

For a more intense coconut flavor, use coconut milk in place of some of the butter in the cake batter.
