Preparation
- Prepare all ingredients by chopping the vegetables and fruits, and cooking the rice if not using day-old rice.
Cooking
- Heat the wok over medium-high heat and add a little oil.
- Add the shrimp (if using) and cook until pink, then remove and set aside.
- In the same wok, add the carrots and bell pepper, stir-frying for 2-3 minutes.
- Add the peas and pineapple, cooking for another 2 minutes.
- Add the cooked rice, soy sauce, oyster sauce, and sesame oil, stirring well to combine.
- Return the shrimp to the wok, season with salt and pepper, and stir-fry for an additional 2-3 minutes.
- Garnish with sliced green onions before serving.
