Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup crushed pineapple drained
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350?F (175?C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the wet ingredients: crushed pineapple, applesauce, egg, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
