Ingredients
  

Topping
  • 1 can sliced pineapple drained
  • 1/2 cup brown sugar packed
  • 1/4 cup unsalted butter melted
Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk whole or 2%
  • 1/3 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Prepare the Topping
  1. Preheat the oven to 350?F (175?C).
  2. In a mixing bowl, combine melted butter and brown sugar until smooth.
  3. Pour the mixture into the bottom of the cake pan.
  4. Arrange the pineapple slices on top of the sugar mixture and place cherries in the center of each slice.
Make the Cake Batter
  1. In a separate bowl, cream together the softened butter and granulated sugar.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in milk and vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cake
  1. Pour the batter over the pineapple topping in the cake pan.
  2. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  3. Remove from the oven and let cool for 10 minutes before inverting onto a serving plate.
