Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour (142g)
  • 0.5 cup granulated sugar (100g)
  • 0.33 cup finely ground salted and roasted pistachios (40g) plus extra for topping
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon ground allspice
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon ground ginger
Wet Ingredients
  • 1 cup finely grated carrots (120g from 1 ? to 2 medium carrots)
  • 0.25 cup packed light brown sugar (55g)
  • 0.25 cup sunflower oil (60ml)
  • 0.5 cup plain full fat yogurt or sour cream (120ml) thinned out with 1 teaspoon milk
  • 1 large egg at room temperature
  • 0.5 teaspoon pure vanilla extract
Frosting
  • 0.5 cup cream cheese very soft (125g)
  • 0.67 cup 35% heavy whipping cream (160ml)
  • 3-4 tablespoon granulated sugar (40-50g)
  • 1 teaspoon lemon juice (5ml)
  • 0.5 teaspoon pure vanilla extract

Method
 

Baking the Cake
  1. Preheat the oven to 350?F and line an 8x8-inch square metal baking pan with parchment paper, leaving a 2-inch overhang on each side, and secure the sides with binder clips.
  2. In a medium bowl, combine flour, granulated sugar, ground pistachios, baking powder, baking soda, salt, and spices, and whisk to blend evenly.
  3. In another medium bowl, combine grated carrots, brown sugar, oil, thinned yogurt or sour cream, egg, and vanilla, and whisk until combined.
  4. Make a well in the center of the dry ingredients and add the wet mixture. Gently fold until evenly combined; the batter will be glossy but thick.
  5. Spread the batter evenly into the prepared pan and bake for 20-25 minutes, or until a skewer inserted into the center comes out clean. Let cool in the pan for 20 minutes, then transfer to a cooling rack.
Making the Frosting
  1. In a large bowl, beat the soft cream cheese until very smooth. Add 2 tablespoons of cream and beat until smooth with no lumps.
  2. Gradually add the remaining cream a few tablespoons at a time, beating well between additions until it forms soft peaks.
  3. Gradually beat in sugar 1 tablespoon at a time until it thickens to a spreadable consistency, then mix in lemon juice and vanilla extract.
Finishing Touches
  1. Spread the frosting over the cooled cake and top with crushed and chopped pistachios before serving.
