Ingredients
  

Proteins
  • 2 cups Cooked chicken breast, shredded
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Quinoa, cooked
Vegetables
  • 2 cups Spinach, fresh
  • 1 cup Bell peppers, diced
  • 1 cup Broccoli, chopped
Healthy Fats
  • 1/4 cup Olive oil
  • 1 avocado Avocado, sliced
Grains
  • 2 cups Brown rice, cooked
  • 1 cup Oats For snacks or breakfast
Spices and Condiments
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Cumin

Method
 

Meal Preparation
  1. Cook quinoa and brown rice according to package instructions. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add bell peppers and broccoli, saut? for 5-7 minutes until tender.
  3. Add shredded chicken, chickpeas, spinach, and spices to the skillet. Cook for an additional 5 minutes until heated through.
  4. Divide cooked quinoa and brown rice into storage containers. Top with the chicken and vegetable mixture.
  5. Slice avocado and add to containers just before serving to keep fresh.
  6. Prepare oats in individual containers for easy breakfast options.
