Ingredients

  • 2 lbs corned beef preferably brisket
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 cup potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup green olives sliced
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon oregano

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, saut? until translucent.
  2. Add the corned beef to the pot and sear on all sides.
  3. Pour in the water and add the black pepper, oregano, and bay leaf. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 45 minutes.
  5. Add the potatoes, carrots, and bell pepper to the pot. Stir to combine.
  6. Continue to simmer for an additional 15 minutes, or until the vegetables are tender.
  7. Stir in the green olives before serving.
  8. Remove the bay leaf and slice the corned beef to serve.
