Ingredients
  

Streusel Topping
  • ? cup all-purpose flour
  • ? cup brown sugar
  • ? cup granulated sugar
  • ? teaspoon cinnamon
  • ? cup unsalted butter melted
Muffin Batter
  • ? cup all-purpose flour
  • ? cup cake flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ? teaspoon baking soda
  • ? teaspoon salt
  • 2 teaspoons cinnamon
  • ? teaspoon ground ginger
  • ? teaspoon nutmeg
  • 2 large eggs at room temperature
  • ? cup vegetable or canola oil
  • 1 cup pumpkin puree
Glaze
  • 1 cup powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon maple flavoring

Method
 

Prepare the streusel topping
  1. In a mixing bowl, combine the flour, sugars, and cinnamon for the streusel. Add the melted butter and mix until fully combined and crumbly. Set aside.
Prepare the sugar swirl
  1. In a small bowl, combine the sugar and cinnamon for the swirl. Set aside.
Preheat oven
  1. Preheat the oven to 425?F. Line a 12-count muffin pan with cupcake liners or grease each tin lightly. Set aside.
Mix the muffin batter
  1. In a large mixing bowl, combine the flours, sugar, baking powder, baking soda, salt, and spices. Add the eggs, oil, and pumpkin, and gently whisk until no streaks of flour remain.
Fill the muffin tins
  1. Scoop half of the muffin batter into the prepared muffin tins using a 2 Tablespoon cookie scoop. Sprinkle each tin with about ? teaspoon of the cinnamon sugar mixture, then add another 2 Tablespoon scoop of batter. The tins should be about ? full. Crumble streusel over the top of each muffin and gently press it down into the batter.
Bake the muffins
  1. Bake the muffins for 5 minutes at 425?F. Leave the muffins in the oven, reduce the temperature to 350?F, and bake for another 15-17 minutes. The total baking time should be 20-22 minutes. Allow muffins to cool for 10-15 minutes before glazing.
Prepare and apply glaze
  1. Whisk together the powdered sugar, milk, and maple flavoring for the glaze until well combined. Drizzle the glaze over the top of each muffin once slightly cool. Serve and enjoy!
