Baking Steps
- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small mixing bowl, whisk together flour, baking soda, baking powder, pumpkin spice, and salt to combine and set aside.
- In the bowl of a standing mixer, combine butter, brown sugar, pumpkin puree, and vanilla extract. Mix on medium speed until well combined, about 30 seconds to 1 minute.
- Gradually add the dry ingredients to the wet ingredients, mixing on medium-low speed until just combined and no streaks of flour are visible. Scrape down the sides as necessary.
- Fold in chocolate chunks with a spatula, reserving ? cup of chocolate chunks.
- Scoop out balls of dough using a small cookie scoop, slightly flattening them to form a puck shape. Create nests with the graham cracker pieces on top and tuck the marshmallows and reserved chocolate pieces in between.
- Bake for 14 minutes, then let the cookies sit on the baking sheet for an additional 5 minutes before transferring them to a cooling rack.
