Ingredients
  

Slaw Base
  • 4 cups shredded purple cabbage
  • 2 cups shredded carrots
Dressing
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Slaw
  1. In a large mixing bowl, combine the shredded purple cabbage and shredded carrots.
Make the Dressing
  1. In a separate bowl, whisk together the apple cider vinegar, honey, Dijon mustard, olive oil, salt, and black pepper until well combined.
Combine
  1. Pour the dressing over the cabbage and carrots, and toss until the vegetables are well coated.
Serve
  1. Let the slaw sit for at least 10 minutes to allow the flavors to meld before serving.
