Ingredients
  

  • 1 cup granulated sugar
  • 4 Tablespoons ground cinnamon
  • 2 packages puff pastry each package includes 2 sheets
  • ½ cup salted butter softened

Method
 

  1. Preheat your oven to 400 °F (204 °C). Spray your muffin pan with a non-stick spray with flour added, or line the muffin pan with liners.
  2. In a small bowl, whisk together the sugar and cinnamon. Set aside 4 Tablespoons for sprinkling on after baking.
  3. Open each puff pastry sheet and lay them flat on the counter. Set two sheets aside for the top.
  4. Spread ¼ cup of butter onto each of the bottom two sheets. Sprinkle half of the larger cinnamon/sugar mixture evenly on top of the buttered pastry sheets.
  5. Place the top two pastry sheets on top of the cinnamon sugar sheets to create a sandwich.
  6. Cut 6 equal strips from each sandwich, totaling 12 strips.
  7. Roll each slice up (cinnamon roll style) and pinch the ends to keep them closed as they bake, then place each roll into a muffin cup.
  8. Bake for about 15-18 minutes or until golden.
  9. Sprinkle with or roll them in the remaining 4 Tablespoons of cinnamon sugar while they are warm.
