- Preheat your oven to 400 °F (204 °C). Spray your muffin pan with a non-stick spray with flour added, or line the muffin pan with liners.
- In a small bowl, whisk together the sugar and cinnamon. Set aside 4 Tablespoons for sprinkling on after baking.
- Open each puff pastry sheet and lay them flat on the counter. Set two sheets aside for the top.
- Spread ¼ cup of butter onto each of the bottom two sheets. Sprinkle half of the larger cinnamon/sugar mixture evenly on top of the buttered pastry sheets.
- Place the top two pastry sheets on top of the cinnamon sugar sheets to create a sandwich.
- Cut 6 equal strips from each sandwich, totaling 12 strips.
- Roll each slice up (cinnamon roll style) and pinch the ends to keep them closed as they bake, then place each roll into a muffin cup.
- Bake for about 15-18 minutes or until golden.
- Sprinkle with or roll them in the remaining 4 Tablespoons of cinnamon sugar while they are warm.
