Ingredients
  

  • 1 cup dry rice
  • 1 lb extra lean ground beef
  • Salt and black pepper to taste
  • 400 g frozen steamed broccoli
  • ½ cup reduced sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh ginger
  • 2 cloves garlic minced
  • 1 teaspoon sriracha sauce
  • 1 tablespoon cornstarch
  • 2 tablespoon sesame seeds for topping
  • 2 green onions thinly sliced for topping

Method
 

  1. Cook rice according to package instructions.
  2. Defrost the broccoli using a steamer basket or in the microwave. Once defrosted, chop the broccoli into small florets.
  3. Heat a large skillet over medium-high heat. Add ground beef, season with salt and black pepper, and break it up with a wooden spatula. Cook, stirring frequently, until no longer pink (about 4 minutes). Drain excess grease using a paper towel.
  4. While the beef is cooking, whisk together soy sauce, honey, sesame oil, ginger, garlic, and sriracha.
  5. Reduce the heat to low and add the sauce to the same pan. Once the sauce bubbles, whisk and add cornstarch to prevent clumps from forming.
  6. Add cooked ground beef and defrosted steamed broccoli back into the pan. Stir to combine and cook for about 5 minutes to heat the broccoli.
  7. Serve over rice and top with sesame seeds and green onions if desired.
