  • 1 bunch radishes sliced thinly
  • 1 medium cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the sliced radishes, diced cucumber, halved cherry tomatoes, sliced red onion, and chopped parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 15 minutes before serving.
