Ingredients
  

For the Cookies
  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour sifted
  • 1/2 cup ground almonds
  • 1/2 cup raspberry jam
For Dusting
  • 1 cup powdered sugar

Method
 

Baking Instructions
  1. Preheat your oven to 350?F (175?C) and line a baking sheet with parchment paper.
  2. Mix the softened butter and powdered sugar together in a large bowl until light and fluffy.
  3. Add the almond extract and finely chopped raspberries into the butter mixture. Stir gently until just combined.
  4. Combine the flour and salt in a separate bowl, then gradually add this dry mixture to your wet ingredients.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on your prepared baking sheet.
  6. Bake for 15-18 minutes or until the cookies are lightly golden at the edges but still soft in the center.
  7. Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack.
  8. Dust cooled cookies with additional powdered sugar for a snowy finish.
