Cooking Steps
- In a stainless steel pan over medium heat, add the avocado oil and saut? the mushrooms until browned, around 10 minutes. Season with salt and pepper towards the end of cooking.
- Add a tablespoon of butter and cook the shallots until cooked through, around 2-3 minutes. Season with salt. Add the garlic and mushrooms and saut? for 2 minutes. Deglaze with red wine and bring up to a simmer. Simmer for 5-8 minutes, until reduced by half.
- Stir in the beef stock and bring up to a simmer. Season with salt and pepper to taste. Simmer until the sauce is thickened to a nappe, roughly 10 minutes.
- Turn off the heat and stir in 3 tbsp of butter until creamy and emulsified. Adjust seasoning as needed. If creamier texture is desired, stir in more butter, a tablespoon at a time.
- Serve and enjoy.
