Ingredients
  

Sauce Ingredients
  • 1-2 tbsp avocado oil
  • 1 lb mushrooms, thinly sliced
  • 1 unit shallot, minced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 1 cup beef stock
  • 6 tbsp cold unsalted butter, cut into small pieces
  • Salt to taste
  • Freshly ground pepper to taste

Method
 

Cooking Steps
  1. In a stainless steel pan over medium heat, add the avocado oil and saut? the mushrooms until browned, around 10 minutes. Season with salt and pepper towards the end of cooking.
  2. Add a tablespoon of butter and cook the shallots until cooked through, around 2-3 minutes. Season with salt. Add the garlic and mushrooms and saut? for 2 minutes. Deglaze with red wine and bring up to a simmer. Simmer for 5-8 minutes, until reduced by half.
  3. Stir in the beef stock and bring up to a simmer. Season with salt and pepper to taste. Simmer until the sauce is thickened to a nappe, roughly 10 minutes.
  4. Turn off the heat and stir in 3 tbsp of butter until creamy and emulsified. Adjust seasoning as needed. If creamier texture is desired, stir in more butter, a tablespoon at a time.
  5. Serve and enjoy.

Notes

This sauce pairs beautifully with grilled or pan-seared steaks and can be stored in an airtight container in the fridge for up to three days. Reheat slowly on the stovetop, adding a splash of water or broth if it thickens too much.
