Ingredients
  

Beans
  • 2 cups cooked pinto beans or black beans
  • 1 tablespoon olive oil or lard
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt adjust to taste
  • 1/2 cup vegetable broth or water
  • 1/4 cup cheddar cheese optional, for serving

Method
 

Cooking the Beans
  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and saut? until translucent.
  2. Add the minced garlic and cumin, cooking for another minute until fragrant.
  3. Stir in the cooked beans and vegetable broth. Cook for about 10 minutes, stirring occasionally.
Mashing the Beans
  1. Using a potato masher, mash the beans to your desired consistency, adding more broth if needed.
  2. Season with salt to taste and cook for an additional 5 minutes, stirring frequently.
Serving
  1. Serve warm, topped with cheddar cheese if desired.
