Rhubarb Overnight Oats

Ingredients
  

Oats Base
  • 2 cups Rolled oats
  • 2 cups Milk or plant-based milk Almond milk works well.
  • 1 cup Greek yogurt Optional for creaminess.
  • 1 tablespoon Chia seeds For added fiber.
  • 2 tablespoons Maple syrup Adjust to taste.
Rhubarb Compote
  • 2 cups Fresh rhubarb, chopped
  • 1/2 cup Sugar Can substitute with honey or agave.
  • 1 cup Water
Toppings
  • 1/4 cup Nuts or seeds Almonds or walnuts are great.
  • 1/4 cup Fresh fruit Berries or banana slices.

Method
 

Prepare Rhubarb Compote
  1. In a saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10-15 minutes until rhubarb is soft and mixture thickens.
  3. Remove from heat and let cool.
Mix Oats
  1. In a mixing bowl, combine rolled oats, milk, Greek yogurt, chia seeds, and maple syrup. Stir well.
  2. Divide the oat mixture into jars or containers.
Layer with Rhubarb
  1. Spoon the cooled rhubarb compote over the oats in each jar.
  2. Cover and refrigerate overnight (or at least 4 hours).
Serve
  1. In the morning, add your choice of nuts or seeds and fresh fruit on top before serving.
