Ingredients
  

Wraps
  • 8 sheets rice paper available at Asian grocery stores
Filling
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup red bell pepper julienned
  • 1 cup fresh herbs such as mint and cilantro
Dipping Sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut butter optional
  • 1 tablespoon lime juice
  • 1 teaspoon honey or agave syrup

Method
 

Prepare the Ingredients
  1. Prepare all filling ingredients by chopping and julienning vegetables and cooking shrimp if not pre-cooked.
Soak Rice Paper
  1. Fill a large bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft.
Assemble the Wraps
  1. Place the softened rice paper on a clean cutting board. Add a small amount of each filling ingredient in the center of the paper.
  2. Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling.
Make the Dipping Sauce
  1. In a small bowl, mix together soy sauce, peanut butter, lime juice, and honey until smooth.
Serve
  1. Serve the rice paper wraps with the dipping sauce on the side.
