Ingredients
  

Roasted Carrots
  • 1 pound carrots peeled and cut into sticks
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Whipped Ricotta
  • 1 cup ricotta cheese full-fat
  • 1 tablespoon olive oil for creaminess
  • 1/4 teaspoon salt to taste
  • 1 tablespoon lemon juice freshly squeezed
Hot Honey
  • 2 tablespoons honey preferably spicy variety
  • 1/2 teaspoon red pepper flakes adjust for spice level

Method
 

Roasting Carrots
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the carrots with olive oil, salt, and pepper.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
Preparing Whipped Ricotta
  1. In a mixing bowl, combine ricotta cheese, olive oil, salt, and lemon juice.
  2. Blend until smooth and creamy using a blender or food processor.
Assembling the Dish
  1. On a serving platter, spread the whipped ricotta.
  2. Top with roasted carrots.
  3. Drizzle hot honey over the top.
  4. Serve warm and enjoy!
