Ingredients
  

Mixed Green Salad
  • 8 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup balsamic vinaigrette for dressing
Pasta Salad
  • 12 ounces pasta such as rotini or penne
  • 1 cup bell peppers diced
  • 1 cup black olives sliced
  • 1 cup mozzarella cheese cubed
  • 1/2 cup Italian dressing for dressing
Quinoa Salad
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
  • 1 cup corn cooked
  • 1 cup black beans rinsed and drained
  • 1 cup cilantro chopped
  • 1/4 cup lime juice for dressing

Method
 

Mixed Green Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. Drizzle with balsamic vinaigrette and toss gently to combine.
Pasta Salad
  1. Cook pasta according to package instructions; drain and cool.
  2. In a large bowl, combine cooked pasta, bell peppers, black olives, and mozzarella cheese.
  3. Add Italian dressing and mix well.
Quinoa Salad
  1. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. Fluff quinoa with a fork and let cool.
  3. In a large bowl, combine cooled quinoa, corn, black beans, and cilantro.
  4. Drizzle with lime juice and toss to combine.
