  • 1 lb Italian sausage casings removed
  • 1 medium butternut squash peeled and diced
  • 1 can cannellini beans drained and rinsed
  • 4 cups vegetable broth
  • 2 cups Swiss chard chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the garlic and sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
  3. Stir in the butternut squash, thyme, salt, and pepper. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the squash is tender.
  5. Add the cannellini beans and Swiss chard, cooking for an additional 5 minutes until the chard is wilted.
  6. Taste and adjust seasoning if necessary. Serve hot.
