Ingredients
  

Crust
  • 36 Oreos, Crushed
  • 1/2 cup Butter, Melted
Cream Cheese Layer
  • 1 8 oz tub Cream Cheese, Softened
  • 1 cup Powdered Sugar
  • 1 8 oz tub Cool Whip, Thawed
Pudding Layer
  • 3 cups Milk
  • 3 3.4 oz box Cheesecake Instant Pudding Mix
  • 1 tsp Mint Extract
  • Green Gel Food Coloring To achieve desired color

Method
 

Crust Preparation
  1. Preheat oven to 375 degrees. Spray a 9 x 13 pan with non-stick spray.
  2. In a food processor, pulse Oreos until finely crushed.
  3. Drizzle in melted butter and pulse until well combined, stirring with a spoon as needed.
  4. Spread Oreo mixture into the bottom of the pan evenly and firmly press down.
  5. Bake for 8 minutes. Let cool.
Cream Cheese Layer
  1. In a large bowl, cream together softened cream cheese, powdered sugar, and 1 tub thawed Cool Whip. Beat until well combined and spread evenly over cooled Oreo crust.
Pudding Layer
  1. In a separate large bowl, beat together milk and cheesecake instant pudding mix. Then mix in 1 tub thawed Cool Whip and 1 tsp mint extract. Add green food coloring gel until desired color is reached.
  2. Spread the pudding mixture over the cream cheese mixture evenly.
  3. Top with additional crushed Oreos if desired.
