Ingredients
  

Beef and Vegetables
  • 1 pound ground beef
  • 5-7 large Russet or Idaho potatoes, peeled and sliced
  • 3/4 cup diced onion
Cheeses and Soups
  • 2-3 cups shredded cheddar cheese, divided
  • 10.5 oz. cream of chicken soup
  • 10.5 oz. cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder (optional)

Method
 

Preparation
  1. Brown the ground beef in a large skillet and season with salt and pepper (to taste).
  2. Whisk together the soups, chicken broth, and garlic powder in a medium-sized mixing bowl, then set aside.
Layering the Casserole
  1. Layer the sliced and peeled potatoes on the bottom of a 6-7 quart slow cooker and season with salt and pepper (optional), then sprinkle diced onions over the potatoes.
  2. Evenly layer the ground beef over the onions and potatoes, then spread 2 cups of shredded cheese over the ground beef.
  3. Pour the cream of soups mixture over the ground beef, then use a spatula to evenly spread the mixture.
Cooking
  1. Cover and cook on low for 5-6 hours or on high for 3-4 hours until the potatoes have softened.
  2. Once the potatoes are soft, sprinkle additional cheese over the top. Allow the cheese to melt, then cool slightly and serve.
