Preparation
- Remove the membrane from the back of the ribs for better flavor absorption.
- Combine all dry rub ingredients in a bowl and mix well.
- Rub the mixture generously over both sides of the ribs.
- Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Cooking
- Preheat the pellet grill to 225?F (107?C).
- Place the ribs on the grill grates bone side down and close the lid.
- Smoke the ribs for 3 hours, maintaining a steady temperature.
- After 3 hours, wrap the ribs in aluminum foil and return to the grill for another 1.5 hours.
- Unwrap the ribs, brush with BBQ sauce, and cook for an additional 30 minutes.
- Check the internal temperature; it should be around 195?F (90?C) for tender ribs.
- Remove from the grill and let rest for 10-15 minutes before slicing.
