Method
Prepare the Brisket
- Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.
- Mix all rub ingredients in a bowl and generously coat the brisket with the rub. Let it sit at room temperature for 30 minutes.
Prepare the Smoker
- Preheat the smoker to 225?F (107?C).
- Add the soaked wood chips to the smoker box or directly on the coals.
Smoke the Brisket
- Place the brisket in the smoker, fat side up, and close the lid.
- Smoke for about 6 hours, or until the internal temperature reaches 195?F (90?C).
- Wrap the brisket in butcher paper or aluminum foil and let it rest for at least 30 minutes before slicing.
Serve
- Slice the brisket against the grain and serve with your favorite barbecue sides.
