Ingredients
  

Main Dishes
  • 2 lbs Collard greens Washed and chopped
  • 1 lb Smoked turkey leg For flavoring the greens
  • 4 cups Chicken broth Low sodium preferred
  • 2 cups Cornmeal For cornbread
  • 1 cup Buttermilk For cornbread
  • 2 large Eggs For cornbread
  • 1 cup Sugar For cornbread
  • 1 tbsp Baking powder For cornbread
Sides
  • 2 cups Cooked black-eyed peas Seasoned with salt and pepper
  • 4 medium Sweet potatoes Peeled and cubed
  • 1 tbsp Butter For sweet potatoes
  • 1 tbsp Brown sugar For sweet potatoes

Method
 

Prepare Collard Greens
  1. In a large pot, combine the collard greens, smoked turkey leg, and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour until greens are tender.
Make Cornbread
  1. Preheat the oven to 400?F (200?C). In a mixing bowl, combine cornmeal, sugar, baking powder, buttermilk, and eggs. Mix until smooth.
  2. Pour the batter into a greased baking dish and bake for 25-30 minutes or until golden brown.
Cook Sweet Potatoes
  1. Boil the sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and mash with butter and brown sugar.
Prepare Black-Eyed Peas
  1. Heat the cooked black-eyed peas in a skillet, seasoning with salt and pepper to taste. Cook until warmed through.
