Marinating Chicken
- Pat the chicken dry and dice into small bite-sized pieces. Add the chicken to a large bowl. Add in marinade ingredients, oil, seasonings, lime juice, and chipotle pepper. Mix the chicken well and let it sit for 15 minutes or up to 24 hours.
Preparing Ingredients
- While the chicken is marinating, cook rice according to the package instructions and prepare all the wrap ingredients, including the sauce/crema.

- Wipe the pan clean and add the chopped peppers and onions along with ½ tsp of oil. Sauté the veggies for about 8 minutes. Add the garlic, then turn the heat down to low. Add the cooked chicken to the skillet to warm it without overcooking.

- Heat up tortillas or wraps, then start assembling them. Begin with rice, then add chicken, veggies, beans, corn, cheese, and drizzle a generous amount of sauce over all ingredients.

- Wrap the fillings tightly like a burrito. Add more sauce as needed and enjoy.
