Ingredients
  

Marinade
  • 0.75 lb chicken breasts, boneless and skinless cut into small pieces
  • 0.25 cup lime juice freshly squeezed
  • 0.5 tsp chili powder
  • 0.5 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 3 tbsp olive oil
  • 1 tbsp chipotle pepper in adobo finely chopped
Wrap Fillings
  • 4 large tortillas
  • 1 cup uncooked rice cooked according to package instructions
  • 1 small red bell pepper sliced
  • 1 whole jalapeño sliced, remove seeds for less heat
  • 0.5 medium red onion sliced
  • 3 cloves garlic minced
  • 0.5 tsp olive oil
  • 0.75 cup corn kernels thawed or fresh
  • 1 cup black beans drained and rinsed
  • 0.25 cup cotija cheese crumbled
Sauce
  • 0.33 cup sour cream
  • 1.5 tbsp honey
  • 0.5-1 tbsp chipotle peppers in adobo adjust to taste
  • 1 tbsp lime juice
  • 3 tbsp fresh cilantro chopped
  • 1-2 tbsp water to adjust consistency
  • 0.25 tsp salt

Method
 

Marinating Chicken
  1. Pat the chicken dry and dice into small bite-sized pieces. Add the chicken to a large bowl. Add in marinade ingredients, oil, seasonings, lime juice, and chipotle pepper. Mix the chicken well and let it sit for 15 minutes or up to 24 hours.
Preparing Ingredients
  1. While the chicken is marinating, cook rice according to the package instructions and prepare all the wrap ingredients, including the sauce/crema.
Making Sauce
  1. To make the sauce, add all of the sauce ingredients to a high-speed blender or food processor and blend until smooth.
Cooking Chicken
  1. In a large skillet, add the marinated chicken and sauté on medium heat for about 12-15 minutes until the chicken is cooked through. Set the cooked chicken aside.
Sautéing Vegetables
  1. Wipe the pan clean and add the chopped peppers and onions along with ½ tsp of oil. Sauté the veggies for about 8 minutes. Add the garlic, then turn the heat down to low. Add the cooked chicken to the skillet to warm it without overcooking.
Assembling Wrap
  1. Heat up tortillas or wraps, then start assembling them. Begin with rice, then add chicken, veggies, beans, corn, cheese, and drizzle a generous amount of sauce over all ingredients.
Wrapping Up
  1. Wrap the fillings tightly like a burrito. Add more sauce as needed and enjoy.
