Dip Base
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese divided
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 cup diced tomatoes drained
  • 1 tablespoon jalapeño diced, optional
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped, optional

Method
 

Prepare the Dip
  1. In a mixing bowl, combine the softened cream cheese and sour cream until smooth.
  2. Stir in the shredded cheddar cheese, corn, black beans, diced tomatoes, jalapeño, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Mix until all ingredients are well combined.
Serve
  1. Transfer the dip to a serving dish and top with sliced green onions and chopped cilantro if desired.
  2. Serve with tortilla chips or fresh vegetables.
