Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil

Method
 

Cooking Spanish Rice
  1. In the rice cooker, heat the olive oil and saut? the onion, bell pepper, and garlic until softened.
  2. Add the rinsed rice and stir for a couple of minutes until lightly toasted.
  3. Pour in the vegetable broth, diced tomatoes (with juice), cumin, paprika, salt, and pepper.
  4. Close the rice cooker lid and set it to the 'white rice' setting or cook for about 25 minutes.
  5. Once cooked, let it sit for 5 minutes before fluffing with a fork and serving.
