  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground allspice
  • 0.5 cups unsalted butter, melted
  • 0.5 cups granulated sugar
  • 0.25 cups brown sugar
  • 2 large eggs
  • 0.5 cups apple cider
  • 1 tsp vanilla extract
  • 0.25 cups granulated sugar (for crust)
  • 1 tsp ground cinnamon (for crust)
  • 2 tbsp melted butter (for brushing)

Method
 

  1. Preheat your oven to 350?F (175?C). Grease and flour a loaf pan to prevent sticking.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  3. In a large bowl, whisk together melted butter, granulated sugar, brown sugar, and eggs. Add the apple cider and vanilla extract, mixing until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into your prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the loaf is baking, mix together the cinnamon and sugar in a small bowl. Once the loaf is baked and slightly cooled, brush the top with melted butter and sprinkle the cinnamon sugar mixture over it.
  7. Slice it up and serve warm.
