Ingredients
  

Carrots
  • 16 pieces Dutch carrots
  • 600 g regular carrots, peeled and cut into quarters
Spicy Maple Sauce
  • 3 tbsp maple syrup
  • 2 tbsp sriracha
  • 1.5 tbsp olive oil
  • 0.25 tsp cooking salt
  • 0.25 tsp black pepper
Chickpeas
  • 400 g canned chickpeas, drained
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.25 tsp cooking salt
  • 0.25 tsp black pepper
  • 1 tbsp maple syrup (optional)
  • 0.5 tbsp sriracha (optional)
Yogurt Sauce
  • 1 cup plain yogurt
  • 0.5 tsp garlic, finely grated
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp cooking salt
  • 2 tbsp finely chopped coriander/cilantro leaves (sub parsley)
  • 3 tbsp toasted pistachios, finely chopped

Method
 

Preparing the Ingredients
  1. Preheat the oven to 200?C/425?F. Arrange the oven racks 20 cm apart for air circulation.
  2. Drain the chickpeas and spread them on a tray. Toss the carrots with the spicy maple sauce ingredients and place both trays in the oven (carrots on the top shelf).
Roasting
  1. After 10 minutes, remove the chickpeas from the oven. Push them to one side of the tray, drizzle with olive oil, sprinkle with spices, salt, and pepper. Toss well and return to the oven for a further 20 ? 25 minutes until crispy.
  2. Roast the carrots for 30 minutes, tossing halfway, until tender and caramelised on the edges.
Making the Yogurt Sauce
  1. Mix the yogurt sauce ingredients in a bowl and set aside for at least 20 minutes to develop flavors.
  2. Mix the extra sauce ingredients (optional) until combined.
Assembling the Dish
  1. Spread the yogurt sauce on a plate, then pile on the carrots. Drizzle with extra sauce if using, sprinkle with chickpeas, coriander, and pistachios.
