Ingredients
  

Noodles
  • 8 oz rice noodles or any preferred noodles
Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup for vegan option
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch ginger fresh, grated
Toppings
  • 1/4 cup chopped peanuts for garnish
  • 2 green onions sliced for garnish
  • 1 cup cucumber sliced, for serving

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and set aside.
Make the Sauce
  1. In a mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, garlic, and ginger until smooth.
Combine
  1. In a skillet over medium heat, add the cooked noodles and pour the sauce over them. Toss to combine and heat through for about 2-3 minutes.
Serve
  1. Serve the noodles in bowls, topped with chopped peanuts, sliced green onions, and cucumber.

Notes
