Ingredients
  

Soup Base
  • 1 cup split peas rinsed and drained
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 6 cups vegetable broth
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Saut? until the vegetables are softened, about 5-7 minutes.
  2. Add the rinsed split peas, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 60 minutes, or until the peas are tender.
  4. Remove the bay leaf. For a creamier texture, blend a portion of the soup using an immersion blender or transfer to a countertop blender.
  5. Serve hot, garnished with additional black pepper or fresh herbs if desired.
