Ingredients
  

Steak and Base
  • 1 lb flank steak or sirloin
  • 1 cup cooked rice white or brown
  • 1 cup black beans canned or cooked
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen
  • 1 cup avocado sliced
  • 1 cup shredded lettuce
  • 1/4 cup cilantro chopped
Sauce
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Prepare the Steak
  1. Preheat the grill to medium-high heat. Season the flank steak with salt, black pepper, and cumin.
  2. Grill the steak for about 6-7 minutes on each side for medium-rare, or until desired doneness.
  3. Remove from grill and let rest for 5 minutes before slicing thinly against the grain.
Assemble the Bowl
  1. In a mixing bowl, combine olive oil, lime juice, salt, and black pepper to make the sauce.
  2. In each bowl, layer cooked rice, black beans, grilled steak, cherry tomatoes, corn, avocado, and shredded lettuce.
  3. Drizzle the sauce over the top and garnish with chopped cilantro.
