- Rinse and hull the fresh strawberries, removing any green tops. Slice them into quarters.
- In a medium saucepan, mix the sliced strawberries with sugar and a splash of lemon juice.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally for about 5-10 minutes.
- Let the compote reduce for another 5 minutes until it thickens slightly.
- Remove the saucepan from heat and let the compote cool for at least 10 minutes.
