Ingredients

  • 4 ears corn on the cob husked
  • 1/2 cup mayonnaise or sour cream
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cilantro chopped, for garnish

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
Preparing the Sauce
  1. In a bowl, mix together mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper until well combined.
Assembling the Dish
  1. Once the corn is grilled, remove it from the grill and brush the mayonnaise mixture generously over each ear of corn.
  2. Sprinkle crumbled cotija cheese over the corn and garnish with chopped cilantro.
