Ingredients
  

Corn Mixture
  • 4 ears corn grilled or boiled, kernels removed
  • 1/2 cup mayonnaise preferably Mexican crema
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cilantro chopped, for garnish

Method
 

Prepare the Corn
  1. Grill or boil the corn until cooked, then allow to cool slightly before removing the kernels.
Mix Ingredients
  1. In a mixing bowl, combine the corn kernels, mayonnaise, cotija cheese, lime juice, chili powder, salt, and black pepper. Mix well until all ingredients are combined.
Serve
  1. Spoon the corn mixture into serving cups and garnish with chopped cilantro.
