Ingredients
  

Sweet Potatoes and Chicken
  • 1.5 pounds sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon black pepper
  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon cajun seasoning
  • 0.5 cup SideDish Apple Cider Vinaigrette plus more for serving
Salad Components
  • 5 cups Lacinato kale
  • 1 large honeycrisp apple
  • 2 cups cooked wild rice
  • 0.5 cup crumbled goat cheese
  • 0.5 cup roughly chopped lightly salted roasted pistachios

Method
 

Cooking Instructions
  1. Preheat the oven to 400?F and line a baking sheet with parchment paper.
  2. Arrange the sweet potatoes on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Toss until well-coated and spread into an even layer.
  3. Roast the sweet potatoes until tender and golden brown on the edges, about 25 minutes.
  4. Place chicken breasts on a cutting board and cover with parchment paper. Pound the chicken until it is a uniform ?-inch thickness.
  5. Season the chicken on both sides with salt, pepper, and cajun seasoning.
  6. Add oil to a large, tall-sided skillet and heat until hot but not smoking. Add the chicken and sear until golden brown on both sides and cooked through, about 3 to 4 minutes per side.
  7. Transfer the chicken to a cutting board and allow to rest while assembling the bowls.
  8. In a large bowl, pour in ? cup of Apple Cider Vinaigrette. When there are 10 minutes left on sweet potato cooking time, add the kale and toss until well-coated in the dressing.
  9. Divide the kale among 4 shallow bowls.
  10. Slice the chicken and divide evenly in each bowl, along with the apple, wild rice, and roasted sweet potatoes.
  11. Top with goat cheese crumbles and pistachios. Finish with a drizzle of Apple Cider Vinaigrette and serve immediately.

Notes

Feel free to customize by swapping sweet potatoes for butternut squash or adding nuts for extra crunch.
