Swiss Chard and Potato Casserole

Ingredients
  

Vegetables
  • 4 cups Swiss chard, chopped stems removed
  • 4 medium potatoes, thinly sliced preferably Yukon Gold
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Dairy
  • 1 cup heavy cream
  • 1 cup shredded cheese such as Gruy?re or cheddar
  • 1 cup milk
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme dried or fresh

Method
 

Prepare the Ingredients
  1. Preheat the oven to 375?F (190?C).
  2. In a skillet, saut? the onion and garlic until translucent.
  3. Add the Swiss chard and cook until wilted, about 3-5 minutes.
Assemble the Casserole
  1. In a baking dish, layer half of the sliced potatoes.
  2. Spread the saut?ed Swiss chard mixture over the potatoes.
  3. Layer the remaining potatoes on top.
  4. In a mixing bowl, combine the cream, milk, cheese, salt, pepper, and thyme. Pour over the layered potatoes and chard.
Bake
  1. Cover the baking dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  3. Let it cool for a few minutes before serving.
