Swiss Chard Rolls with Rice and Beef

Ingredients
  

Filling
  • 1 cup Cooked Rice White or brown rice
  • 1 pound Ground Beef Can substitute with ground turkey
  • 1 small Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Olive Oil For saut?ing
Swiss Chard
  • 12 leaves Swiss Chard Large leaves, stems removed
Sauce
  • 1 cup Tomato Sauce For topping
  • 1 teaspoon Dried Oregano

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, saut? until softened.
  2. Add ground beef, paprika, salt, and pepper. Cook until browned. Stir in cooked rice and mix well.
Prepare the Chard Leaves
  1. Bring a large pot of salted water to a boil. Blanch Swiss chard leaves for 2-3 minutes until tender. Remove and cool.
  2. Pat dry and trim any thick stems if necessary.
Assemble the Rolls
  1. Place a spoonful of the filling on each chard leaf. Roll tightly and tuck in the sides.
  2. Place rolls seam-side down in a baking dish.
Bake
  1. Preheat oven to 350?F (175?C). Pour tomato sauce over the rolls and sprinkle with oregano.
  2. Cover with aluminum foil and bake for 30-40 minutes until heated through.
