Prepare the Cupcake Base
- Preheat the oven to 350?F (175?C) and grease a muffin tin.
- In a mixing bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add eggs, milk, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the muffin tin, filling each cup about halfway.
Prepare the Taco Filling
- In a skillet over medium heat, cook the ground beef until browned.
- Stir in taco seasoning, black beans, and corn, cooking until heated through.
- Remove from heat and mix in sour cream and salsa.
Assemble and Bake
- Spoon the taco filling into each cupcake batter cup.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
Serve
- Let the taco cupcakes cool slightly before removing from the muffin tin.
- Top with lettuce, diced tomatoes, jalapenos, and cilantro before serving.
