Ingredients
  

Tortilla Bowls
  • 4 pieces Flour Tortillas Can substitute with corn tortillas for gluten-free
  • 1 cup Shredded Cheese Cheddar or Mexican blend
Salad Filling
  • 1 pound Ground Beef Can substitute with ground turkey or meat alternative
  • 1 packet Taco Seasoning Store-bought or homemade
  • 1 can Black Beans Rinsed and drained
  • 1 cup Corn Fresh, frozen, or canned
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Lettuce Shredded
  • 1 avocado Avocado Diced
  • 1/2 cup Sour Cream For topping
  • 1/4 cup Fresh Cilantro Chopped
Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 teaspoon Honey Optional for sweetness
  • 1 teaspoon Cumin
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste

Method
 

Prepare Tortilla Bowls
  1. Preheat the oven to 375?F (190?C).
  2. Lightly brush both sides of the tortillas with olive oil.
  3. Press the tortillas into a muffin tin to form bowls.
  4. Sprinkle shredded cheese inside each tortilla bowl.
  5. Bake for 10-12 minutes until crispy and golden.
Cook the Filling
  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add taco seasoning and follow package instructions.
  3. Stir in black beans and corn, cooking until heated through.
Assemble the Salad
  1. In a large mixing bowl, combine lettuce, tomatoes, avocado, and cilantro.
  2. In a small bowl, whisk together dressing ingredients.
  3. Pour dressing over salad and toss to combine.
  4. Spoon the beef mixture into the tortilla bowls, then top with salad mixture and sour cream.
