Ingredients
  

Patatas Bravas
  • 4 medium potatoes peeled and diced
  • 1 cup olive oil for frying
  • 1 teaspoon paprika smoked
  • 1 teaspoon garlic powder
  • 1 cup aioli for dipping
Gambas al Ajillo
  • 1 pound shrimp peeled and deveined
  • 4 cloves garlic sliced
  • 1/2 cup olive oil
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon parsley chopped for garnish
Chorizo al Vino
  • 1 pound chorizo sausage sliced
  • 1 cup red wine
  • 1 tablespoon olive oil
  • 1 teaspoon bay leaf optional
Pinchos Morunos
  • 1 pound pork tenderloin cut into cubes
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 skewers wooden skewers soaked in water

Method
 

Patatas Bravas
  1. Heat olive oil in a frying pan over medium heat. Add diced potatoes and fry until golden brown and crispy.
  2. Remove potatoes and drain on paper towels. Season with salt and serve with aioli and a sprinkle of paprika.
Gambas al Ajillo
  1. In a frying pan, heat olive oil and add sliced garlic. Saut? until fragrant.
  2. Add shrimp and red pepper flakes. Cook until shrimp are pink and opaque. Garnish with parsley.
Chorizo al Vino
  1. In a pan, heat olive oil and add sliced chorizo. Cook until browned.
  2. Pour in red wine and add bay leaf. Simmer until the wine reduces slightly.
Pinchos Morunos
  1. In a bowl, mix pork cubes with olive oil, cumin, paprika, salt, and pepper. Marinate for at least 30 minutes.
  2. Thread marinated pork onto skewers and grill on medium heat until cooked through.
