Ingredients
  

Casserole Base
  • 12 pieces taquitos store-bought or homemade
  • 2 cups enchilada sauce red or green sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup sour cream for serving
  • 1 cup chopped cilantro for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350?F (175?C).
  2. In a baking dish, spread half of the enchilada sauce on the bottom.
  3. Arrange the taquitos in a single layer over the sauce.
  4. Top with black beans and corn evenly.
  5. Pour the remaining enchilada sauce over the taquitos and sprinkle with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from oven and let cool for a few minutes before serving.
  8. Serve with sour cream and garnish with chopped cilantro.
