Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken thighs
Teriyaki Sauce
  • 1/2 cup teriyaki sauce store-bought or homemade
Vegetables
  • 2 cups mixed vegetables such as broccoli, bell peppers, and carrots
Rice
  • 2 cups cooked rice white or brown rice
Garnish
  • 2 tablespoons sesame seeds for topping
  • 2 scallions sliced for garnish

Method
 

Prepare the Chicken
  1. Cut the chicken thighs into bite-sized pieces.
  2. In a mixing bowl, combine the chicken pieces with teriyaki sauce and marinate for at least 10 minutes.
Cook the Chicken
  1. Heat a skillet over medium heat and add the marinated chicken.
  2. Cook for about 10-12 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.
Prepare the Vegetables
  1. In the same skillet, add the mixed vegetables and stir-fry for 5-7 minutes until tender.
Assemble the Bowl
  1. In serving bowls, place a portion of cooked rice, top with the teriyaki chicken and vegetables.
  2. Garnish with sesame seeds and sliced scallions.
