Ingredients
  

Curry Base
  • 2 tablespoons green curry paste adjust to taste
  • 1 can coconut milk full-fat for creaminess
  • 1 cup vegetable broth
Proteins
  • 1 pound chicken breast sliced thinly
  • 1 cup tofu cubed, optional
Vegetables
  • 1 cup bell peppers sliced
  • 1 cup zucchini sliced
  • 1 cup baby spinach fresh
  • 1 cup eggplant cubed
Aromatics
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 2 leaves lime leaves torn
Garnish
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Curry
  1. In a wok, heat a small amount of oil over medium heat. Add the green curry paste and saut? for 1-2 minutes until fragrant.
  2. Pour in the coconut milk and vegetable broth, stirring to combine.
Add Proteins and Vegetables
  1. Add the sliced chicken and tofu (if using) to the wok. Cook for about 5-7 minutes until the chicken is cooked through.
  2. Stir in the bell peppers, zucchini, eggplant, and lime leaves. Cook for an additional 10 minutes until the vegetables are tender.
  3. Add the baby spinach and cook until wilted.
Serve
  1. Remove from heat and garnish with fresh basil and cilantro. Serve hot with lime wedges on the side.

Notes

Adjust the spiciness by varying the amount of green curry paste used. Serve with jasmine rice for a complete meal.
