Bread and Apples
  • 1 lb loaf Sourdough Or French Bread cut into chunks
  • 3 cups chopped apples (2 large apples)
Egg Mixture
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/4 cup light brown sugar unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
Streusel Topping
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed brown sugar
  • 1 tsp cinnamon
  • 1 1/2 tsp apple pie spice
  • 1/2 cup salted butter cut into pieces
Toppings (Optional)
  • maple syrup
  • powdered sugar
  • whipped cream
  • caramel sauce

Method
 

Preparation
  1. Grease a 9x13 inch casserole dish.
  2. Chop the bread into bite-sized chunks and place in a large bowl.
  3. Chop the apples into small chunks and add to the bowl with the bread, stirring gently to combine.
  4. Lay the bread chunks and chopped apples in an even layer in the bottom of the dish.
  5. In a large bowl, whisk together the eggs, milk, cream, sugars, cinnamon, and vanilla. Pour evenly over the bread, ensuring the top is saturated.
  6. Cover the casserole and store in the fridge overnight.
Baking
  1. When ready to bake, preheat the oven to 350?F (176?C).
  2. Bake the casserole uncovered for about 35-40 minutes.
  3. While baking, combine the dry ingredients for the streusel in a small bowl. Add the butter and mash it into the dry mixture until crumbly.
  4. Remove the casserole from the oven and sprinkle the streusel over the top.
  5. Bake for about 5 more minutes, or until the streusel is melted and crisp.
  6. Allow to cool slightly and serve warm with desired toppings.
Storage
  1. Store in the fridge and consume within 4 days.
