Ingredients
  

  • 10 tablespoons unsalted butter
  • 1.25 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder plus 2 tablespoons
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 large cold eggs
  • 1/2 cup all-purpose flour
  • 2/3 cup chopped walnuts or pecans or chocolate chips optional

Method
 

  1. Preheat oven to 325?F (162?C) and line an 8-inch square baking pan with parchment paper or aluminum foil.
  2. Melt the butter in a medium saucepan over medium-low heat.
  3. Stir in the sugar, cocoa powder, vanilla, and salt into the melted butter until well blended.
  4. Cool the mixture until it is warm, not hot, about 5 to 10 minutes.
  5. Add the cold eggs one at a time, stirring vigorously after each addition.
  6. Beat in the flour until the batter is very thick and pulls away from the sides of the bowl.
  7. Stir in nuts or chocolate chips if using.
  8. Pour the batter into the prepared pan and spread it evenly.
  9. Bake for 20 to 30 minutes until edges look set and the middle is slightly underbaked.
  10. Let the brownies cool completely in the pan before slicing.
