Ingredients
  

  • 13 oz udon noodles 2 packets, vacuum packed
  • 2.5 cups stir fry vegetables chopped (mushrooms, bok choy, onions)
  • 2 stalks scallions cut 2 inches long
  • 0.5 lb ground meat beef, chicken, turkey, pork, or shrimp
  • 1 Tablespoon avocado oil
  • 2.5 Tablespoons dark soy sauce
  • 2 Tablespoons oyster sauce
  • 1 Tablespoon mirin
  • 2 teaspoons brown sugar
  • 0.5 teaspoon rice wine vinegar

Method
 

  1. Mix all the ingredients for the sauce in a small bowl and set aside.
  2. Remove the udon noodles from their package and add to a pot of boiling water. Stir gently until the noodles are separated and pliable, about 1 - 2 minutes. Rinse and drain under cold water. Drizzle on a little bit of oil if not using right away.
  3. Heat a pan over high heat and add the oil. Add the ground meat and stir fry until almost cooked. Add the vegetables and stir fry until the meat is fully cooked and vegetables are soft.
  4. Add in the noodles, sauce, and scallions. Stir fry for about 3 minutes or until well combined. Serve immediately.
