Method
- Mix flour, yeast, and salt in a large bowl. Add water and use a wooden spoon to mix until all the flour is incorporated.
- Cover with cling wrap or a plate and leave on the counter for 2 ? 3 hours until it doubles in volume.
- If desired, refrigerate the dough for up to 3 days to develop flavor.
- Preheat the oven to 230?C (450?F) with a Dutch oven inside (26cm/10" or larger) for 30 minutes prior to baking.
- Sprinkle a work surface with 1 tbsp flour and scrape the dough out of the bowl. Sprinkle the top with 1/2 tbsp flour.
- Fold the sides of the dough inwards to form a roundish shape, then flip it onto a large piece of parchment paper so the seam side is down.
- Transfer the dough to the hot Dutch oven using the parchment paper and place the lid on.
- Bake for 30 minutes covered, then remove the lid and bake for an additional 12 minutes or until deep golden and crispy.
- Cool on a rack for 10 minutes before slicing.
