Ingredients
  

  • 3 cups flour all-purpose or bread flour
  • 2 tsp instant or rapid rise yeast
  • 2 tsp cooking or kosher salt
  • 1.5 cups very warm tap water
  • 1.5 tbsp flour for dusting

Method
 

  1. Mix flour, yeast, and salt in a large bowl. Add water and use a wooden spoon to mix until all the flour is incorporated.
  2. Cover with cling wrap or a plate and leave on the counter for 2 ? 3 hours until it doubles in volume.
  3. If desired, refrigerate the dough for up to 3 days to develop flavor.
  4. Preheat the oven to 230?C (450?F) with a Dutch oven inside (26cm/10" or larger) for 30 minutes prior to baking.
  5. Sprinkle a work surface with 1 tbsp flour and scrape the dough out of the bowl. Sprinkle the top with 1/2 tbsp flour.
  6. Fold the sides of the dough inwards to form a roundish shape, then flip it onto a large piece of parchment paper so the seam side is down.
  7. Transfer the dough to the hot Dutch oven using the parchment paper and place the lid on.
  8. Bake for 30 minutes covered, then remove the lid and bake for an additional 12 minutes or until deep golden and crispy.
  9. Cool on a rack for 10 minutes before slicing.
